Wakes cakes

A very old local recipe, traditionally made for the celebrations during wakes weeks. The celebrations traditionally began with a night time vigil in the Parish Church, on the Sunday closest to the Saint's Day to which the Church was dedicated. The vigil was followed by a week of celebrations, and many wakes cakes were consumed.

They are crumbly butter biscuits, packed full of currants, flavoured with lemon, and dotted with caraway seeds. They have quickly become a favourite among our customers and are ideal for serving with a cup of tea.

Ingredients: Locally produced fresh butter, locally produced plain flour, unrefined organic sugar, lemon zest, lemon juice, currants, caraway seed, egg.

"Winster wakes, there's ale & cakes,
